Truffle Risotto


Truffle risotto is a rich and decadent dish that is perfect for a special occasion. Ingredients

  • 1 litre (4 cups) vegetable stock
  • 60ml (1/4 cup) white wine

  • 30g butter
  • 2-3 tablespoons truffle oil
  • Salt and pepper, to taste

Method

1. In a large pot, bring the vegetable stock to a simmer.

2. In a separate pan, heat the white wine over medium heat. Add the shallot and garlic and cook until softened, about 5 minutes.

3. Add the rice to the pan and cook, stirring often, until the rice is evenly coated with the wine.

4. Add a ladleful of the hot stock to the rice and cook, stirring often, until the stock is absorbed. Continue adding the stock, a ladleful at a time, until the rice is cooked through but still al dente. This will take about 20 minutes.

5. Stir in the parmesan cheese, butter, and truffle oil. Season with salt and pepper to taste. Serve immediately.

Potential changes & improvements

If you are not a fan of truffles, you can omit the truffle oil from the recipe. You could also try substituting the white wine with chicken stock for a less rich dish.
