Chicken Satay with Peanut Sauce

Method

  1. In a large bowl, whisk together the coconut milk, soy sauce, brown sugar, turmeric, coriander, cumin, cloves, salt, and pepper.
  2. Add the chicken strips and stir to coat. Marinate for at least 30 minutes, up to overnight.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the chicken onto skewers. Grill for 8-10 minutes, until cooked through.
  5. To make the peanut sauce, whisk together the peanut butter, coconut milk, brown sugar, lime juice, ginger, cayenne, and salt.
  6. Serve the chicken skewers with the peanut sauce.
