Introduction

Panzanella is a Tuscan bread and tomato salad that is traditionally made with stale bread that is soaked in water and then squeezed dry. The bread is then cubed and mixed with tomatoes, onion, basil, parsley, and olive oil.

Ingredients

1 loaf of stale bread, cubed
3-4 tomatoes, diced
1/2 onion, diced
1/4 cup basil, chopped
1/4 cup parsley, chopped
1/2 cup olive oil
1/4 cup vinegar
Salt and pepper, to taste

Method

1. Soak the bread in water for 10 minutes.
2. Squeeze the water out of the bread and place it in a large bowl.
3. Add the tomatoes, onion, basil, parsley, and olive oil to the bowl and mix together.
4. Add the vinegar, salt, and pepper and mix together.
5. Let the salad sit for 30 minutes to allow the flavors to meld.
