Carpaccio
Introduction
Carpaccio is a dish of raw meat or fish, thinly sliced and served with a dressing. It is usually made with beef, but can also be made with other meats, such as venison, or fish, such as tuna.
Ingredients
-500g beef fillet
-1 tablespoon olive oil
-1 tablespoon lemon juice
-Salt and pepper
-50g Parmesan cheese, shaved
-1 bunch rocket leaves
Method
1. Slice the beef fillet as thinly as possible.
2. In a bowl, combine the olive oil, lemon juice, salt and pepper.
3. Place the beef slices in the bowl and coat with the dressing.
4. Arrange the beef slices on a plate, overlapping them slightly.
5. Scatter the Parmesan cheese over the top and serve with the rocket leaves.
Potential changes & improvements
-You could add other herbs to the dressing, such as thyme or rosemary.
-If you can’t get hold of beef fillet, you could use another cut of beef, such as sirloin or ribeye.
-The beef could be replaced with tuna, salmon or swordfish.
What other food it works well with
-Carpaccio goes well with a green salad and a glass of white wine.
Common Mistakes
-One common mistake is to slice the beef too thickly. The slices should be as thin as possible.
-Another mistake is to use a cheaper cut of beef. Beef fillet is the best cut to use, but if you can’t get hold of it, sirloin or ribeye will be fine.
