Mole Poblano

Ingredients

  • 1 whole chicken
  • 1 large onion, chopped

  • 10-12 corn tortillas
  • 2-3 cups shredded Oaxaca or mozzarella cheese

Method

In a large pot or Dutch oven, heat the oil over medium heat. Add the chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.

Add the onions and garlic to the pot and cook until softened. Stir in the flour, cumin, and oregano, and cook for 1 minute. Pour in the chicken broth and bring to a simmer. Add the ancho, guajillo, and pasilla chiles and simmer for 30 minutes.

Remove the pot from the heat and let the mixture cool slightly. Carefully transfer the mixture to a blender and blend until smooth. Return the mixture to the pot and stir in the sugar, cilantro, salt, and pepper. Add the chicken back to the pot and simmer until cooked through, about 30 minutes.

To make the tortillas, heat a large skillet over medium heat. Add a little oil to the skillet and cook the tortillas for 1-2 minutes per side. Remove from the skillet and let cool.

To assemble the dish, place 2-3 tortillas in the bottom of a baking dish. Top with some of the chicken mixture and sprinkle with cheese. Repeat the layers until all the tortillas and chicken mixture are used up. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
