Mango and Lobster Salad with Avocado Foam

  • 1/4 cup (60 ml) mint leaves, chopped
  • 2 tablespoons (30 ml) olive oil
  • 1/4 teaspoon salt
  • 1/2 a lobster tail, cooked and meat removed
  • 1 avocado, peeled and diced
  • 1/4 cup (60 ml) coconut milk
  • 1/4 cup (60 ml) chicken stock
  • 1 tablespoon (15 ml) fish sauce
  • 1/4 teaspoon sugar

Method

  1. In a large bowl, combine the mango, avocado, lime juice, chili, coconut milk, chicken stock, fish sauce and sugar. Mix well and set aside.
  2. In another large bowl, combine the romaine lettuce, cucumber, cilantro, mint, olive oil and salt. Toss well.
  3. To assemble, divide the salad between four plates. Top with the lobster meat and avocado cubes. Spoon the mango dressing over the top. Finally, add a dollop of avocado foam on top.
