Chawanmushi (Savory Egg Custard)

Ingredients
4 eggs
1/2 cup dashi
1/4 cup soy sauce
1/4 cup mirin
1 teaspoon salt
1 block firm tofu, cut into small cubes
1/4 cup thinly sliced shiitake mushrooms
1/4 cup thinly sliced carrot
1 green onion, thinly sliced

Method
1. In a medium bowl, whisk together eggs, dashi, soy sauce, mirin, and salt.
2. Pour mixture into a large, deep saucepan. Add tofu, shiitake mushrooms, carrot, and green onion.
3. Bring mixture to a simmer over medium heat. Cook, stirring occasionally, until custard is set and vegetables are cooked through, about 15 minutes.
4. Serve hot or cold.
