Ingredients
- 1 tablespoon vegetable oil
- 1 small onion, diced

- 150g pork loin, cut into small strips

- 100g green beans, trimmed and cut into small pieces
- 2 tablespoons soy sauce
- 1 tablespoon sake
- 1 teaspoon sugar
- 250g yakisoba noodles
- Toppings of your choice (e.g. beni shoga pickled ginger, aonori seaweed, katsuobushi bonito flakes)
Method
- Heat the oil in a large frying pan or wok over a medium-high heat. Add the onion and garlic and fry for 1-2 minutes until softened.
- Add the pork and fry for 3-4 minutes until browned. Add the carrot, red pepper and green beans and fry for a further 2-3 minutes.
- Add the soy sauce, sake and sugar and fry for 1 minute until the sugar has dissolved. Add the yakisoba noodles and fry for 2-3 minutes until heated through.
- Serve with your chosen toppings.

You could add other vegetables to the stir-fry, such as cabbage or mushrooms. You could also swap the pork for chicken, beef, or tofu. For a vegetarian version, you could omit the meat and add extra vegetables.
