Chankonabe (Sumo Stew)
Introduction

Ingredients
1 kg chicken thighs
1 onion
1 carrot

Method
1. In a large pot or dutch oven, brown the chicken thighs in batches.
2. Once all the chicken is browned, add the onion, carrot, celery, garlic, soy sauce, mirin, sake, and sugar.
3. Pour in the chicken stock and bring to a simmer.
4. Add the tofu and peas and cook until the vegetables are tender.
5. Serve in bowls and enjoy!
