Antipasto skewers are a quick and easy way to put together a tasty appetizer or main course. Simply skewer your favourite cured meats, cheeses, vegetables and olives and you’re good to go!
Ingredients
- 1/2 pound Italian dry salami, cut into 1-inch pieces
- 1/2 pound mozzarella cheese, cut into 1-inch pieces
- 1/2 cup marinated artichoke hearts
- 1/2 cup marinated olives
- 1 red pepper, cut into 1-inch pieces
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon freshly ground black pepper
Method
1. Preheat grill to medium-high heat.
2. To make the skewers, alternate the salami, cheese, artichoke hearts, olives, and red pepper on metal or wooden skewers (if using wooden skewers, soak in water for 30 minutes before using).
3. In a small bowl, whisk together balsamic vinegar, olive oil, oregano, and black pepper.
4. Grill skewers for 5 to 7 minutes, or until the cheese is melted and the salami is slightly charred.
5. Remove from grill and brush with the balsamic vinegar mixture. Serve immediately.
Potential changes & improvements
If you’re looking for a bit more of a kick, try using spicy salami or adding a few drops of hot sauce to the balsamic vinegar mixture. You could also swap out the olives for another type of pickled vegetable, such as peppers, cucumbers, or onions.

These skewers are delicious on their own, but would also be great served with a side of crusty bread or a simple salad.

One common mistake is not pre-soaking the wooden skewers, which can cause them to catch on fire when placed on the grill. Another mistake is not properly sealing or storing the balsamic vinegar mixture, which can cause the vinegar to spoil.
