Cannoli


Introduction

Cannoli are a traditional Italian pastry which are typically made with a fried dough shell and a sweet filling. They can be made in various different ways, but the most common filling is a ricotta cheese mixture.

Ingredients

-250g of ricotta cheese
-100g of sugar
-1 teaspoon of vanilla extract
-50g of chocolate chips

-1 egg
-30g of flour

-vegetable oil, for frying
-icing sugar, for dusting

Method

1. In a large bowl, mix together the ricotta cheese, sugar, vanilla extract, chocolate chips, candied fruit and egg.

2. Sift in the flour and baking powder, and mix until everything is well combined.

3. Place the mixture in a piping bag fitted with a star nozzle.

4. Heat the vegetable oil in a large saucepan.

5. Pipe the mixture into the hot oil, using a spiral motion.

6. Fry the cannoli for 2-3 minutes, or until golden brown.

7. Remove from the oil and drain on paper towels.

8. Dust with icing sugar and serve.
