Chicken Skewers with Satay Sauce
Ingredients:
-1 lb chicken breast, cut into cubes
-1/2 cup satay sauce
-1/4 cup coconut milk
-1 tbsp. brown sugar
-1 tsp. curry powder
-1/4 tsp. cayenne pepper
-1/2 red onion, cut into wedges
-1 red pepper, cut into cubes
-1 zucchini, cut into cubes
Method:
1. Preheat grill or grill pan to medium-high heat.
2. In a large bowl, whisk together satay sauce, coconut milk, brown sugar, curry powder, and cayenne pepper.
3. Add chicken cubes and vegetables to the bowl and toss to coat.
4. Thread chicken and vegetables onto skewers.
5. Grill for 8-10 minutes, or until chicken is cooked through and vegetables are slightly charred.
6. Serve with additional satay sauce, if desired.
This recipe is perfect for a summer BBQ! The chicken and vegetables are grilled to perfection and coated in a flavorful satay sauce. You can use any type of chicken you like, but I prefer to use chicken breast because it’s leaner and healthier. I also like to add a variety of different vegetables to my skewers, but feel free to use whatever you have on hand.
If you’re not a fan of spice, you can omit the cayenne pepper from the sauce. And if you want a little more sweetness, you can add an extra tablespoon of brown sugar.
This recipe would also be great with shrimp or tofu! Just make sure to adjust the cooking time accordingly.
