Introduction

A crostata is a rustic Italian tart, typically made with a sweet or savoury filling enclosed in a free-form pastry dough. The dough is rolled out, then placed over the filling, and the edges are folded up and over to create a crust. Crostata can be made with a variety of fillings, including jam, fruit, chocolate, ricotta, and even vegetables.

Ingredients

For the pastry:

200g plain flour

100g cold butter, diced

100g caster sugar

1 egg

For the filling:

250g raspberries

100g blueberries

2 tablespoons caster sugar

1 tablespoon plain flour

Method

1. Preheat the oven to 190°C.

2. To make the pastry, combine the flour, butter, sugar, and egg in a food processor and pulse until the mixture resembles breadcrumbs.

3. Transfer the mixture to a floured surface and knead until it comes together to form a dough.

4. Roll the dough out to a thickness of about 3mm.

5. Place the dough in a 9-inch tart pan, pressing it into the bottom and up the sides.

6. Trim the excess dough from the edges.

7. To make the filling, combine the raspberries, blueberries, sugar, flour, and lemon juice in a bowl and mix gently.

8. Pour the filling into the pastry-lined tart pan.

9. Bake the crostata for 45 minutes to 1 hour, or until the pastry is golden brown and the filling is bubbling.

10. Let the crostata cool for at least 30 minutes before serving.

-For a more decadent crostata, add a layer of chocolate or ricotta cheese to the filling.
