Foamed Morel Mushrooms

Ingredients:
-1 pound (450 grams) morel mushrooms
-1 cup (240 ml) water

-1/8 teaspoon (0.5 ml) black pepper
-3 tablespoons (45 ml) unsalted butter
-3 tablespoons (45 ml) all-purpose flour
-2 cups (480 ml) milk
-1/4 cup (60 ml) heavy cream
Method:
1. Clean the morel mushrooms by brushing off any dirt with a soft brush. Do not wash them, as they will absorb too much water and become mushy.
2. Slice the mushrooms in half lengthwise.
3. In a large sauté pan, heat the water, wine, lemon juice, salt, and pepper over medium heat.
4. Add the mushrooms and cook until they are tender, about 5 minutes.
5. Remove the mushrooms from the pan with a slotted spoon and set aside.
6. In the same pan, melt the butter over medium heat.
7. Stir in the flour and cook for 1 minute.
8. Slowly whisk in the milk and cream until the sauce is smooth and thickened.
9. Return the mushrooms to the pan and cook until heated through.
10. Serve immediately.
