Knedle sa Višnjama (Sour Cherry Dumplings)


-1kg of pitted sour cherries
-250g of plain flour
-125g of butter
-100g of sugar
-1 teaspoon of baking powder
-1 egg
-A pinch of salt
-1 tablespoon of bread crumbs


1. Preheat the oven to 180°C.
2. In a large bowl, mix together the flour, sugar, baking powder and salt.
3. Rub in the butter until the mixture resembles breadcrumbs.
4. Stir in the egg and knead to form a soft dough.
5. Divide the dough into 12 balls.
6. Place the dough balls onto a floured surface and press each one flat.
7. Place a handful of cherries onto the centre of each dough disc.
8. Bring the edges of the dough up around the cherries, enclosing them completely.
9. Place the dumplings onto a greased baking tray, sprinkle with bread crumbs and bake for 25 minutes.

Potential changes & improvements:

-For a sweeter dumpling, increase the sugar to 200g.
-For a less sweet dumpling, reduce the sugar to 50g.
-For a vegan version, use margarine instead of butter.

Works Well With…

-Sour cherry dumplings are traditionally served with vanilla ice cream.
-They can also be served with custard or whipped cream.

Common Mistakes:

-Forgetting to pit the cherries before adding them to the dough will result in a very messy and sticky dumpling.
-Not kneading the dough properly will result in a tough dumpling.
