Lobster Thermidor
Ingredients
1 whole lobster, cooked and shelled
2 Tbsp. butter
1 Tbsp. flour
1/2 cup dry white wine
1/2 cup milk
1/4 cup grated Parmesan cheese
1 tsp. Dijon mustard
Salt and pepper
1/4 cup bread crumbs
2 Tbsp. butter, melted
Method
1. Preheat oven to 400 degrees Fahrenheit.
2. In a saucepan over medium heat, melt butter. Stir in flour and cook for 1 minute.
3. Add wine and milk, whisking until mixture thickens.
4. Stir in Parmesan cheese and Dijon mustard. Season with salt and pepper.
5. Pour sauce over lobster in a baking dish.
6. In a small bowl, mix together bread crumbs and melted butter. Sprinkle over top of sauce.
7. Bake for 10-15 minutes, or until bread crumbs are golden brown.
Potential changes & improvements
If you want a richer sauce, you could substitute half of the milk for heavy cream.
For a bit of extra flavour, you could add a pinch of cayenne pepper to the sauce.
