Medenjaci (Honey Cookies)

These are light, delicate and subtly flavoured cookies, which are very popular in Croatia. They are made with just a few ingredients, and are incredibly easy to make. The dough is rolled out thinly, and then cut into small circles. They are then baked until golden brown and crispy.

  • 250g plain flour
  • 125g butter
  • 100g sugar
  • 1 egg
  • 1 tsp baking powder
  • 2 tbsp honey

  1. Preheat the oven to 180C/350F/Gas 4.
  2. Sift the flour and baking powder into a bowl.
  3. Rub in the butter until the mixture resembles breadcrumbs.
  4. Stir in the sugar, egg and honey until the mixture forms a soft dough.
  5. Roll out the dough thinly on a floured surface.
  6. Cut out small circles with a pastry cutter.
  7. Place the cookies on a baking tray and bake in the oven for 10-15 minutes, until golden brown and crispy.

Potential changes & improvements

If you want a more pronounced honey flavour, you could add an extra tablespoon of honey to the dough. You could also add a teaspoon of vanilla extract for a more complex flavour. If you want a more traditional Croatian cookie, you could add a tablespoon of rum to the dough.

What other food it works well with

These cookies are usually served with coffee or tea. They would also go well with a glass of milk.

Common Mistakes

One common mistake is to add too much flour to the dough, which will make the cookies tough and dry. Another mistake is to not roll the dough out thinly enough, which will make the cookies thick and heavy.
