Medenjaci (Honey Cookies)


These are light, delicate and subtly flavoured cookies, which are very popular in Croatia. They are made with just a few ingredients, and are incredibly easy to make. The dough is rolled out thinly, and then cut into small circles. They are then baked until golden brown and crispy.

Ingredients

  • 250g plain flour
  • 125g butter
  • 100g sugar
  • 1 egg
  • 1 tsp baking powder
  • 2 tbsp honey

Method

  1. Preheat the oven to 180C/350F/Gas 4.
  2. Sift the flour and baking powder into a bowl.
  3. Rub in the butter until the mixture resembles breadcrumbs.
  4. Stir in the sugar, egg and honey until the mixture forms a soft dough.
  5. Roll out the dough thinly on a floured surface.
  6. Cut out small circles with a pastry cutter.
  7. Place the cookies on a baking tray and bake in the oven for 10-15 minutes, until golden brown and crispy.
