Mini Empanadas


These delicious little empanadas are perfect for a party or as a snack. They are so easy to make and can be filled with anything you like. I love to fill mine with a mixture of cheese and ham, but you could also use chicken, beef, or even just vegetables. The possibilities are endless!

Ingredients

  • 1 sheet of puff pastry, thawed
  • 1 egg, beaten
  • 1/2 cup of shredded cheese
  • 1/4 cup of diced ham

Method

  1. Preheat oven to 200 degrees C.
  2. Unroll the puff pastry sheet on a lightly floured surface.
  3. Cut out 12 circles using a cookie cutter or a glass.
  4. In a small bowl, mix together the shredded cheese and diced ham.
  5. Place a heaped teaspoon of the cheese mixture in the center of each circle.
  6. Fold the pastry over to form a half moon shape and press the edges together to seal.
  7. Brush the tops of the empanadas with the beaten egg.
  8. Bake in the oven for 10-12 minutes until golden brown.

These empanadas are best served warm, straight from the oven. Enjoy!
