Nabemono (Hot Pot)

Nabemono, or Hot Pot, is a delicious and hearty dish perfect for winter nights. It is a one-pot meal that is simple to make and can be easily customized to your liking. The best part about Hot Pot is that it can be made with whatever ingredients you have on hand.

Ingredients:

-1 pound of beef, thinly sliced

-1 head of Napa cabbage, thinly sliced

-1 carrot, thinly sliced

-1 onion, thinly sliced

-2 cloves of garlic, minced

-1 inch piece of ginger, minced

-8 cups of beef stock

-1/2 cup of soy sauce

-1/4 cup of rice vinegar

-1 tablespoon of sesame oil

-2 tablespoons of cornstarch

-1/4 cup of green onions, thinly sliced

-1/4 cup of cilantro, chopped

Method:

1. In a large pot or Dutch oven, combine the beef stock, soy sauce, rice vinegar, sesame oil, and cornstarch. Stir until the cornstarch is dissolved.

2. Add the beef, cabbage, carrot, onion, garlic, and ginger. Bring the soup to a boil over high heat.

3. Reduce the heat to low and simmer for 30 minutes.

4. Ladle the soup into bowls and top with green onions and cilantro.

Potential changes & improvements:

-If you prefer a thinner soup, you can add additional beef stock or water.

-For a spicier soup, add a few slices of fresh chili pepper or a teaspoon of chili paste.

-If you want a heartier soup, you can add additional vegetables such as mushrooms, zucchini, or potatoes.

Works Well With…

-Hot pot is typically served with rice, noodles, or dumplings.

-It also goes well with a side of steamed broccoli or a simple green salad.

Common Mistakes:

-Adding too much ginger or garlic can make the soup taste overly strong. Start with a small amount and add more to taste.

-Not simmering the soup long enough will result in a watery soup. Be sure to simmer for at least 30 minutes to allow the flavors to develop.

-Not thinning the soup enough will make it too thick and starchy. If the soup is too thick, simply add additional beef stock or water.
