Sernik Wędzony (Smoked Cheesecake)

This is a Polish-style smoked cheesecake that is traditionally made with quark cheese. It has a dense, creamy texture and a slightly smoky flavour. It is often served with fruit or jam, and can be made in advance and stored in the fridge for up to a week.

Ingredients

  • 500g quark cheese
  • 200g caster sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 100g plain flour
  • 1 teaspoon baking powder
  • 100g butter, melted
  • 1 tablespoon smoked paprika

Method

  1. Preheat the oven to 180C/350F/Gas 4.
  2. In a large bowl, mix together the quark cheese, sugar, eggs, vanilla extract, flour and baking powder until well combined.
  3. Stir in the melted butter and smoked paprika.
  4. Pour the mixture into a 23cm/9in springform cake tin and bake in the oven for 45 minutes, or until golden-brown and set.
  5. Remove from the oven and allow to cool completely before serving.

Potential changes & improvements

You could try using a different type of cheese in this recipe, such as cottage cheese or ricotta. You could also add in some chopped fruit, such as berries or cherries. If you want a more intense smoky flavour, you could try using a different type of paprika, such as smoked chili powder.

What other food it works well with

This cheesecake goes well with fresh fruit or jam. It can also be served with a salad or roasted vegetables.

Common Mistakes

One common mistake when making this recipe is to not bake the cheesecake for long enough. The cheesecake should be golden-brown and set before it is removed from the oven. Another mistake is to use a different type of cheese, such as cream cheese, which will not give the same results.
