Sernik Wędzony (Smoked Cheesecake)

This is a Polish-style smoked cheesecake that is traditionally made with quark cheese. It has a dense, creamy texture and a slightly smoky flavour. It is often served with fruit or jam, and can be made in advance and stored in the fridge for up to a week.


  • 500g quark cheese
  • 200g caster sugar
  • 3 eggs
  • 1 teaspoon vanilla extract

  1. Preheat the oven to 180C/350F/Gas 4.

  4. Pour the mixture into a 23cm/9in springform cake tin and bake in the oven for 45 minutes, or until golden-brown and set.
