Stuffed Squid with Chorizo and Quinoa

Ingredients

1 whole squid, cleaned
3 chorizo sausages, casing removed
1/2 cup quinoa
1/4 cup red wine
1 onion, diced
1 garlic clove, minced
1/4 teaspoon chili flakes
1 teaspoon smoked paprika
1/4 teaspoon cumin
1 tablespoon olive oil
1/4 cup parsley, chopped

Method

1. Preheat oven to 200C/400F.

2. In a small saucepan, cook quinoa according to package instructions.

3. In a medium skillet, cook chorizo over medium-high heat until browned. Remove from pan and set aside.

4. In the same skillet, sauté onion and garlic in olive oil until softened. Add chili flakes, smoked paprika, and cumin. Cook for 1 minute.

5. Add cooked quinoa and chorizo to the skillet and mix well.

6. stuff the mixture into the squid cavity.

7. Place stuffed squid onto a baking sheet and bake for 12-15 minutes, or until cooked through.

8. Garnish with parsley and serve.

-Try using a different type of sausage, such as kielbasa or Italian sausage.
-Add some chopped vegetables to the stuffing mixture, such as bell peppers or zucchini.
