Tacos de suadero are a delicious type of taco popular in central and northern Mexico. They are made with thin slices of beef brisket that has been cooked until tender. The beef is then typically served on soft corn tortillas and topped with salsa, onions, and cilantro. These tacos are hearty and filling, and the beef brisket can be cooked ahead of time and reheated when you’re ready to eat.
Ingredients:
- 1 kg beef brisket
- 2 tsp. chili powder
- 1 tsp. cumin
- 1/2 tsp. garlic powder
- 1/4 tsp. oregano
- Salt and pepper
- 2 Tbsp. olive oil
- 1/2 cup beef broth
- 10-12 corn tortillas
- Salsa, onions, and cilantro for serving
Method:
1. Preheat oven to 325 degrees Fahrenheit.
2. Mix together chili powder, cumin, garlic powder, oregano, salt, and pepper. Rub this mixture all over the beef brisket.
3. Heat olive oil in a large oven-proof skillet or Dutch oven over medium-high heat. When hot, add the beef and sear on all sides until browned.
4. Add the beef broth to the pan and bring to a simmer. Cover the pan with a lid or foil and transfer to the oven. Bake for 3-4 hours, or until the beef is very tender.
5. Remove the beef from the pan and let rest for 10 minutes. Thinly slice the beef against the grain. Serve the beef on warm tortillas with salsa, onions, and cilantro.
Potential changes & improvements:
-Try serving the tacos with a side of refried beans or rice.
-If you can’t find beef brisket, you can also use flank steak or skirt steak.
-The beef can also be cooked in a slow cooker if you prefer.
Works Well With…
Tacos de suadero go well with a variety of sides, including refried beans, rice, and a simple green salad.
Common Mistakes:
-Not searing the beef before cooking: Searing the beef helps to lock in the flavor and gives the beef a nice browned exterior.
-Not slicing the beef thinly enough: Thinly slicing the beef is key to getting tender tacos that aren’t too chewy.
