Thai Chicken Satay Skewers
Ingredients
1 lb chicken breast, cut into small strips
1 red pepper, cut into small strips
1 green pepper, cut into small strips
1 onion, cut into small strips
8 skewers
For the marinade:
2 tsp turmeric
1 tsp ground coriander
1 tsp cumin
2 cloves garlic, minced
2 tbsp coconut milk
1 tbsp soy sauce
1 tbsp honey
For the peanut sauce:
1/2 cup peanut butter
1/2 cup coconut milk
1 tsp chili paste
1 tsp curry powder
1/4 tsp salt
Method
1. In a large bowl, mix together all of the ingredients for the marinade. Add the chicken strips and peppers, and toss to coat. Let sit for at least 30 minutes.
2. Preheat a grill or grill pan over medium-high heat.
3. Thread the chicken and peppers onto skewers. Grill for 10-12 minutes, until the chicken is cooked through.
4. While the chicken is grilling, whisk together the ingredients for the peanut sauce. Serve with the skewers.
Potential changes & improvements
-For a more traditional flavor, you could use lemongrass in the marinade.
-If you don’t have skewers, you could simply cook the chicken and peppers in strips.
-Try serving with a side of rice or noodles.

-This dish would also be delicious with shrimp or pork.
Common Mistakes
-Not marinating the chicken long enough. For best results, marinate for at least 30 minutes, or up to overnight.
-Not preheating the grill before cooking. This will result in uneven cooking.
