Ingredients
1 litre water
1 kg sugar
1 cinnamon stick
1 vanilla pod
1 kg white sugar
8 egg yolks
1 kg pork fat

Method
1. Add the water, sugar, cinnamon and vanilla pod to a saucepan and heat until the sugar has dissolved.
2. Add the pork fat to the pan and cook until it is rendered down and the liquid has thickened.
3. Remove from the heat and allow to cool.
4. Once cool, add the egg yolks and mix well.
5. Pour the mixture into a food processor and blend until smooth.
6. Pour the mixture into a clean, dry jar and seal.
7. Store in the fridge for up to 2 months.
