Tongue Tacos with Salsa Verde

Ingredients

  • 1 lb beef tongue
  • 1 onion

Method

  1. Place the beef tongue in a large pot and cover with water.
  2. Add the onion, garlic, bay leaves, cumin, chili powder, oregano, salt and pepper.
  3. Bring to a boil and simmer for 2-3 hours or until the tongue is tender.
  4. Remove the tongue from the pot and let cool.
  5. Peel off the skin and discard.
  6. Chop the tongue into small pieces.
  7. In a large skillet, heat the salsa verde over medium heat.
  8. Add the chopped tongue and cook for 5-7 minutes or until heated through.
  9. Meanwhile, warm the tortillas in a dry skillet over medium heat.
  10. To assemble the tacos, place a few pieces of tongue in the center of each tortilla and top with cilantro and a squeeze of lime.
