These zucchini fritters are crispy on the outside and fluffy on the inside, and are served with a delicious garlic yogurt sauce. They’re perfect for a light lunch or dinner, and are also great as a side dish.
Ingredients
- 1 large zucchini, grated
- 1/2 onion, grated
- 1 garlic clove, minced
- 1/4 cup (60 ml) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg, beaten
- 2 tablespoons (30 ml) olive oil
- For the garlic yogurt sauce:
- 1/2 cup (120 ml) plain yogurt
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Method
In a large bowl, mix together the zucchini, onion, garlic, flour, baking powder, salt, and pepper. Add the egg and mix well. Heat the oil in a large frying pan over medium heat. Add the zucchini mixture by the tablespoonful and cook for 2-3 minutes per side, until golden brown. Serve with the garlic yogurt sauce.
Potential changes & improvements
If you want a bit more of a crunch in your fritters, you could add some chopped nuts or seeds to the batter. For a bit of extra flavor, you could also add some chopped fresh herbs. The garlic yogurt sauce can also be made with other herbs, such as dill or mint.
What other food it works well with
These fritters go well with a salad or roasted vegetables. They would also be great as a side dish for grilled chicken or fish.
Common Mistakes
Be sure to squeeze the grated zucchini well before adding it to the batter, otherwise the fritters will be too wet. Also, be sure not to overcrowd the pan when cooking the fritters, otherwise they will be difficult to flip.
