Chicken Alfredo


This classic Italian dish is creamy, tasty and so easy to make. You can have it on the table in just 30 minutes.

Ingredients

  • 4 chicken breasts, thinly sliced
  • Salt and pepper
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1/2 cup white wine
  • 1/2 cup chicken broth
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Method

Season the chicken with salt and pepper. In a large skillet over medium-high heat, heat the oil. Add the chicken and cook for about 3 minutes per side, until golden brown. Add the garlic and cook for 1 minute. Add the wine, chicken broth, thyme, basil, and oregano. Bring to a simmer and cook for 2 minutes. Add the cream and Parmesan and cook, stirring, until the sauce is thickened. Add the parsley and serve.

If you want a bit more of a kick, you could add some red pepper flakes to the sauce. For a veggie side, try serving this with some sautéed spinach or broccoli. You could also swap out the chicken for shrimp.
