Caramelized Onion and Gruyere Tartlets

1 puff pastry sheet
1 egg
1 tablespoon Dijon mustard
1 tablespoon olive oil
2 large sweet onions, sliced
1/4 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon dried thyme
1/2 cup Gruyere cheese, shredded

1. Preheat oven to 375 degrees F (190 degrees C).

2. On a lightly floured surface, roll pastry to a 1/8-in.-thick (3-mm-) sheet. Trim even with edge of pan.

3. Line pan with pastry. Trim pastry even with edge of pan. Prick pastry several times with fork. Bake for 8 minutes. Cool on a wire rack.

4. In a small bowl, whisk together egg, mustard and oil.

5. In a large skillet, heat onions over medium-high heat, stirring frequently, for 10 minutes.

6. Add salt, sugar and thyme. Cook, stirring frequently, for 10 minutes.

7. Reduce heat to medium. Cook, stirring frequently, for 20 minutes or until onions are golden brown.

8. Spread onions over crust. Sprinkle with cheese. Bake for 10 minutes. Cool on a wire rack.

-For a sweeter tart, add a bit more sugar to the onion mixture
