Caramelized Onion Sauce


This sweet and savory sauce is perfect for so many different dishes! Add it to roasted vegetables, pasta, or rice. It’s also delicious on its own as a dipping sauce. You can make this sauce as mild or as spicy as you like by adjusting the amount of crushed red pepper flakes.

Ingredients

  • 1 tablespoon olive oil
  • 4 cups thinly sliced onion
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/4 cup white wine
  • 1/4 cup balsamic vinegar
  • 1/4 cup chicken or beef broth
  • 1 tablespoon chopped fresh thyme

Method

Heat the oil in a large saucepan over medium heat. Add the onion, salt, sugar, and crushed red pepper flakes (if using). Cook, stirring occasionally, until the onion is very soft and golden brown, about 30 minutes.

Add the wine, vinegar, broth, and thyme. Cook for 2 minutes, or until the liquid is reduced by half. Puree the sauce in a blender or food processor until smooth. Serve immediately, or store in a covered container in the refrigerator for up to 1 week.

If you want a smoother sauce, you can strain it through a fine mesh strainer after pureeing.

For a richer sauce, you can add a tablespoon of butter when you add the wine.
