Chicken and Spinach Lasagna

This dish is healthy and hearty, and perfect for a winter meal. It’s packed with flavour, and is sure to please the whole family.


  • 500g chicken breast, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper
  • 400g can diced tomatoes
  • 150g spinach leaves
  • 10 lasagna sheets
  • 500ml white sauce
  • 1/2 cup grated cheese


  1. Preheat oven to 190°C.
  2. In a large frying pan, sauté chicken, onion and garlic in olive oil until chicken is cooked through. Add oregano, basil, salt and pepper, and cook for 1 minute more.
  3. Stir in diced tomatoes and spinach leaves, and cook until spinach is wilted.
  4. To assemble, spread a layer of chicken mixture over the base of a baking dish. Top with a layer of lasagna sheets, then a layer of white sauce. Repeat layers until all ingredients are used up. Sprinkle with grated cheese.
  5. Bake for 25-30 minutes, or until lasagna is cooked through and cheese is golden and bubbly.

If you’re looking for a more indulgent dish, you could add some mozzarella cheese to the chicken mixture, or use a richer white sauce. For a vegetarian version, you could swap the chicken for mushrooms.

Common Mistakes

Be sure to cook the chicken thoroughly before adding the other ingredients, as raw chicken will not cook properly in the oven. Also, make sure to wilter the spinach leaves before adding them to the mixture, as they will not soften in the oven.
