Introduction
This is a light, refreshing salad dressing which is perfect for summer. It is made with fresh herbs, citrus juice and olive oil.
Ingredients
1/4 cup (60 ml) freshly squeezed orange juice
1/4 cup (60 ml) freshly squeezed lemon juice
1/4 cup (60 ml) white wine vinegar
1 teaspoon honey
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup (120 ml) olive oil
1/4 cup (60 ml) chopped fresh parsley
1/4 cup (60 ml) chopped fresh basil
1/4 cup (60 ml) chopped fresh thyme
Method
1. In a small bowl, whisk together the orange juice, lemon juice, vinegar, honey, mustard, salt and pepper.
2. Slowly whisk in the olive oil until it is emulsified.
3. Stir in the parsley, basil and thyme.
4. Taste and adjust the seasoning as necessary.
5. Store in a jar in the fridge for up to 2 weeks.
Potential changes & improvements
– If you don’t have all of the fresh herbs, you could use 1 tablespoon of dried herbs instead.
– You could add a clove of garlic if you wanted to.
What other food it works well with
This dressing is great on a green salad, but it would also be good on roasted vegetables or grilled chicken.
Common Mistakes
– Adding the oil too quickly – you need to add it slowly so that it emulsifies properly.
– Not tasting the dressing and adjusting the seasoning – it is important to do this so that the dressing is to your taste.
