Ingredients

Method
Preheat oven to 350 degrees F (175 degrees C).
Heat the oil in a large saucepan over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes. Stir in the flour and cook for 1 minute. Add the chicken broth, cilantro, chili powder, cumin, salt, and pepper. Bring to a simmer and cook until thickened, about 10 minutes.
Stir in the chicken and let cool slightly.
Place the tortillas on a work surface. Divide the chicken mixture evenly among the tortillas. Roll up the tortillas, and place seam-side down in a 9×13 inch baking dish. Pour the sauce over the enchiladas, and sprinkle with the cheese.
Bake in the preheated oven until the cheese is melted and bubbly, about 20 minutes.
Serve with sour cream.

If you want a spicier dish, you can add more chili powder to the sauce. You could also add some chopped jalapeños to the sauce. For a vegetarian option, you could use black beans or lentils in place of the chicken.
