Enchiladas Verdes

Enchiladas Verdes are a traditional Mexican dish made with corn tortillas, chicken, and a green salsa. They are typically served with rice and beans, and can be made with either chicken or beef. This dish is perfect for a weeknight meal, and can be made ahead of time and reheated when ready to eat.

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cooked chicken
  • 10-12 corn tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream

Preheat oven to 350 degrees F (175 degrees C).

Heat the oil in a large saucepan over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes. Stir in the flour and cook for 1 minute. Add the chicken broth, cilantro, chili powder, cumin, salt, and pepper. Bring to a simmer and cook until thickened, about 10 minutes.

Stir in the chicken and let cool slightly.

Place the tortillas on a work surface. Divide the chicken mixture evenly among the tortillas. Roll up the tortillas, and place seam-side down in a 9×13 inch baking dish. Pour the sauce over the enchiladas, and sprinkle with the cheese.

Bake in the preheated oven until the cheese is melted and bubbly, about 20 minutes.

Serve with sour cream.

Potential changes & improvements

If you want a spicier dish, you can add more chili powder to the sauce. You could also add some chopped jalapeños to the sauce. For a vegetarian option, you could use black beans or lentils in place of the chicken.

What other food it works well with

Enchiladas Verdes go well with rice and beans, or a simple salad.

Common Mistakes

Be sure to not overcook the chicken, or it will be dry. If the sauce is too thick, you can thin it out with a little bit of water.
