Escargot en Croute

Escargot en croute

This dish is a classic French recipe, perfect for a special occasion. It is simple to make and can be easily adapted to suit your own taste. The dish consists of escargot (snails) cooked in a garlic and herb butter, then wrapped in puff pastry and baked. It can be served as a main course or as a starter.

Ingredients

  • 1kg of escargot
  • 1 garlic clove, finely chopped
  • 1 shallot, finely chopped
  • 30g of butter
  • 1 sprig of thyme
  • 1 sheet of puff pastry, thawed
  • 1 egg, beaten
  • Salt and pepper

Method

Preheat the oven to 200°C/400°F/Gas 6.

To make the filling, melt the butter in a pan over a medium heat. Add the garlic, shallot and thyme and cook for 2-3 minutes until softened. Add the escargot and cook for a further 2-3 minutes. Season to taste with salt and pepper.

Lay the puff pastry sheet on a lightly floured surface and cut into 24 squares. Place a spoonful of the escargot mixture into the centre of each square. Brush the edges of the pastry with beaten egg, then bring the corners up and twist to seal.

Place the parcels on a baking sheet and bake in the oven for 15-20 minutes until the pastry is golden brown and cooked through. Serve hot.

Potential changes & improvements

If you are not a fan of escargot, you could use mushrooms or another type of shellfish in this recipe. The filling can also be adapted to suit your own taste. For example, you could add some chopped bacon or a splash of white wine.

What other food it works well with

This dish goes well with a simple green salad and some crusty bread.

Common Mistakes

One common mistake when making this dish is not sealing the pastry parcels properly. This can cause the filling to leak out during cooking. Make sure you brush the edges of the pastry with beaten egg and twist to seal tightly.
