Escargot en croute

  • 1kg of escargot
  • 1 garlic clove, finely chopped
  • 1 shallot, finely chopped
  • 30g of butter
  • 1 sprig of thyme
  • 1 sheet of puff pastry, thawed
  • 1 egg, beaten
  • Salt and pepper


Preheat the oven to 200°C/400°F/Gas 6.

To make the filling, melt the butter in a pan over a medium heat. Add the garlic, shallot and thyme and cook for 2-3 minutes until softened. Add the escargot and cook for a further 2-3 minutes. Season to taste with salt and pepper.

Lay the puff pastry sheet on a lightly floured surface and cut into 24 squares. Place a spoonful of the escargot mixture into the centre of each square. Brush the edges of the pastry with beaten egg, then bring the corners up and twist to seal.

Place the parcels on a baking sheet and bake in the oven for 15-20 minutes until the pastry is golden brown and cooked through. Serve hot.

If you are not a fan of escargot, you could use mushrooms or another type of shellfish in this recipe. The filling can also be adapted to suit your own taste. For example, you could add some chopped bacon or a splash of white wine.
