Ingredients
- 1 lb. large shrimp, peeled and deveined
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup fresh parsley leaves
- 1/4 cup fresh cilantro leaves
- 1 clove garlic
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup olive oil
- 1 tablespoon red wine vinegar
Method
1. Preheat grill to medium-high heat.
2. To a small bowl, add shrimp, garlic powder, smoked paprika, chili powder, cumin, 1/4 teaspoon salt, 1/4 teaspoon pepper, and 2 tablespoons olive oil. Toss to coat.
3. Thread shrimp onto skewers (if using wooden skewers, soak in water for 30 minutes before using).
4. Grill for 2-3 minutes per side, or until opaque and slightly pink in the center.
5. To a food processor, add parsley, cilantro, garlic, 1/4 teaspoon salt, 1/4 teaspoon pepper, 1/4 cup olive oil, and red wine vinegar. Pulse until well combined.
6. Serve shrimp skewers with chimichurri sauce.
