Lemon Caper Sauce
This delicious sauce is perfect for fish, chicken or vegetables. It’s quick and easy to make, and can be tailored to your own taste.
Ingredients
1 tablespoon olive oil
1 small shallot, finely chopped
1 clove garlic, finely chopped
3 tablespoons capers, rinsed and drained
1/4 cup white wine
1/2 cup chicken stock
1/4 cup lemon juice
1 tablespoon chopped parsley
Salt and pepper
Method
Heat the oil in a small saucepan over medium heat. Add the shallot and garlic and cook until softened. Add the capers, wine, chicken stock and lemon juice and bring to a boil. Reduce the heat and simmer for 5 minutes. Season with salt and pepper to taste. Stir in the parsley and serve.
Potential changes & improvements
If you want a thinner sauce, you can add more chicken stock. For a thicker sauce, cook it for a little longer so that it reduces down. You can also add more or less lemon juice to taste.
