Lobster Bisque Foam

A luxurious and indulgent soup, lobster bisque is made even more special with the addition of a light and airy foam. This recipe is easy to follow and guaranteed to impress your dinner guests!

Ingredients:

  • 1 lobster, cooked and meat removed
  • 1 onion, diced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 garlic clove, minced
  • 1/4 cup (60 ml) brandy
  • 2 cups (500 ml) chicken stock
  • 1 cup (250 ml) cream
  • 1 egg yolk
  • Salt and pepper

Method:

1. In a large saucepan, sweat the onion, carrot, celery and garlic in a little oil until softened.

2. Add the brandy and cook until evaporated.

3. Add the chicken stock and cream, and bring to a simmer.

4. Add the lobster meat and cook for a few minutes until heated through.

5. Season to taste with salt and pepper, then remove from the heat.

6. In a bowl, whisk together the egg yolk and 1/4 cup (60 ml) of the soup. Pour this mixture back into the soup and stir well.

7. Using a hand blender, blend the soup until smooth. Pass it through a fine sieve and into a clean saucepan.

8. Place the saucepan over low heat and gently heat the soup, whisking constantly, until it thickens and forms a light foam. Do not allow the soup to boil.

9. Serve immediately, with a little extra lobster meat and a sprinkle of chives.

Potential changes & improvements:

As this recipe is already quite indulgent, there are not many ways in which it could be made richer or more decadent. However, if you wanted to add a little extra luxury, you could stir in a spoonful of caviar just before serving.

Works Well With…

This soup is rich and flavourful, so it is best served on its own as a first course. However, if you wanted to bulk it out a little, you could serve it with some crusty bread on the side.

Common Mistakes:

The most common mistake when making this soup is to allow it to boil, as this will cause the egg yolk to curdle. To avoid this, make sure you keep the soup over a low heat and whisk it constantly.

Nutritional Information:

This soup is rich in protein, fat and cholesterol. It is also a good source of vitamins A and C. However, it is high in calories, so should be enjoyed in moderation.

Allergens:

This recipe contains egg, milk and shellfish. It is not suitable for vegetarians or vegans. If you have any other allergies, please check the ingredients list carefully before starting to cook.
