Lobster Bisque Foam

A luxurious and indulgent soup, lobster bisque is made even more special with the addition of a light and airy foam. This recipe is easy to follow and guaranteed to impress your dinner guests!


  • 1 lobster, cooked and meat removed
  • 1 onion, diced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 garlic clove, minced
  • 1/4 cup (60 ml) brandy
  • 2 cups (500 ml) chicken stock
  • 1 cup (250 ml) cream
  • 1 egg yolk
  • Salt and pepper


1. In a large saucepan, sweat the onion, carrot, celery and garlic in a little oil until softened.

2. Add the brandy and cook until evaporated.

3. Add the chicken stock and cream, and bring to a simmer.

4. Add the lobster meat and cook for a few minutes until heated through.

5. Season to taste with salt and pepper, then remove from the heat.

6. In a bowl, whisk together the egg yolk and 1/4 cup (60 ml) of the soup. Pour this mixture back into the soup and stir well.

7. Using a hand blender, blend the soup until smooth. Pass it through a fine sieve and into a clean saucepan.

8. Place the saucepan over low heat and gently heat the soup, whisking constantly, until it thickens and forms a light foam. Do not allow the soup to boil.

9. Serve immediately, with a little extra lobster meat and a sprinkle of chives.

As this recipe is already quite indulgent, there are not many ways in which it could be made richer or more decadent. However, if you wanted to add a little extra luxury, you could stir in a spoonful of caviar just before serving.
