Mushroom Bruschetta with Balsamic Reduction
This dish is the perfect blend of earthy and sweet flavors. The mushrooms are cooked in a balsamic reduction, which gives them a deep, rich flavor. The sweetness of the balsamic pairs perfectly with the earthiness of the mushrooms. The dish is then topped with a fresh, bright, and acidic tomato salsa. The result is a dish that is complex, yet well balanced.
Ingredients:
-1 pound mushrooms, cleaned and sliced
-1/2 cup balsamic vinegar
-1/4 cup olive oil
-1 teaspoon salt
-1/4 teaspoon black pepper
-1 baguette, sliced into 1-inch pieces
-1 pint cherry tomatoes, diced
-1/4 cup chopped fresh basil
-1/4 cup chopped fresh parsley
-1 clove garlic, minced
-1/4 cup olive oil
-1/4 cup balsamic vinegar
-1 teaspoon salt
-1/4 teaspoon black pepper
Method:
1. Preheat oven to 375 degrees Fahrenheit.
2. In a large bowl, combine mushrooms, balsamic vinegar, olive oil, salt, and pepper. Toss to coat.
3. Spread the mixture onto a baking sheet. Roast for 25 minutes, or until the mushrooms are tender and the balsamic vinegar has reduced to a syrup.
4. Meanwhile, in a small bowl, combine cherry tomatoes, basil, parsley, garlic, olive oil, balsamic vinegar, salt, and pepper. Toss to coat.
5. When the mushrooms are done, let them cool for a few minutes. Then, top each slice of baguette with a few mushrooms and a spoonful of the tomato salsa. Serve immediately.

-You could also grilled the mushrooms and the baguette slices.
-If you are not a fan of balsamic vinegar, you could substitute it with another acid, such as red wine vinegar or apple cider vinegar.
