Oysters Kilpatrick with Bacon and Worcestershire
Ingredients
-1 dozen oysters, shucked
-6 strips of bacon, diced
-1/4 cup (60 ml) of Worcestershire sauce
-1/4 cup (60 ml) of bread crumbs
-1/4 cup (60 ml) of grated Parmesan cheese
Method
1) Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
2) In a skillet, cook the bacon over medium heat until crisp.
3) Remove the bacon from the pan with a slotted spoon and drain on paper towels.
4) Pour off all but 1 tablespoon (15 ml) of the bacon fat from the pan.
5) Add the oysters to the pan and cook until they start to curl at the edges, about 2 minutes.
6) Remove the oysters from the pan and drain on paper towels.
7) In a bowl, mix together the bacon, Worcestershire sauce, bread crumbs, and Parmesan cheese.
8) Spoon the mixture over the oysters.
9) Place the oysters on a baking sheet and bake for 10 minutes.
10) Serve immediately.

-You could use different types of cheese in the bread crumb mixture, such as cheddar or Swiss.
-Try adding a bit of hot sauce to the bread crumb mixture for a bit of a kick.
-If you don’t have any bacon fat, you can use butter or olive oil in the pan.
