Lamb is a flavoursome meat that is perfect for a special occasion. This Pistachio-Crusted Rack of Lamb is a simple yet impressive dish that is sure to impress your guests. The lamb is coated in a pistachio crust and is served with a simple yet flavoursome sauce.


1 rack of lamb

1 cup (100g) pistachios, finely chopped

1 egg, beaten

1/4 cup (60ml) olive oil

1/2 cup (120ml) white wine

1/4 cup (60ml) chicken stock

1 tablespoon (15ml) Dijon mustard

1 tablespoon (15ml) honey

1 clove garlic, minced

Salt and pepper


1. Preheat oven to 200°C (400°F).

2. In a shallow bowl, combine pistachios, egg and olive oil.

3. Season lamb with salt and pepper. Press pistachio mixture onto lamb.

4. Place lamb on a rack in a roasting pan. Roast for 20-25 minutes for medium-rare, or until a meat thermometer inserted into the thickest part of the lamb registers 55°C (130°F).

5. Remove lamb from oven and let rest for 5 minutes before slicing.

6. To make the sauce, in a small saucepan over medium heat, bring wine, chicken stock, Dijon mustard, honey and garlic to a boil. Cook for 2-3 minutes, or until slightly thickened.

7. Serve lamb sliced and with the sauce on the side.
