Pork Belly with Espresso BBQ Sauce and Pickled Red Onions

Ingredients

1kg Pork belly

2tbsp paprika

2tbsp smoked paprika

1tbsp garlic powder

1tsp cumin

For the espresso BBQ sauce

250ml ketchup

125ml dark brown sugar

60ml apple cider vinegar

60ml espresso

2tsp smoked paprika

1tsp garlic powder

1/2tsp cumin

For the pickled red onions

1 large red onion, thinly sliced

250ml red wine vinegar

250ml water

125ml sugar

1tsp salt

Method

1) Combine the paprika, smoked paprika, garlic powder and cumin in a small bowl, then rub all over the pork belly. Place in a roasting tin and roast at 190C for 45 minutes, until the skin is crisp.

2) Meanwhile, make the espresso BBQ sauce by combining all of the ingredients in a saucepan over a low heat. Simmer for 10 minutes, stirring occasionally, then set aside.

3) For the pickled red onions, combine the vinegar, water, sugar and salt in a saucepan over a medium heat. Bring to the boil, then add the onions and cook for 2 minutes. Remove from the heat and set aside.

4) When the pork belly is cooked, remove from the oven and brush with the espresso BBQ sauce.

5) Serve the pork belly with the pickled red onions and a green salad.

-You could use a different type of pork, such as pork loin or pork shoulder.
-If you don’t have espresso, you could use strong coffee instead.
-The pickled red onions could be replaced with pickled cucumber or pickled shallots.
