Raspberry Lemonade

A refreshing summer drink made with just a few simple ingredients – raspberries, lemon juice, sugar and water. Add a sprig of mint to finish.


  • 1 punnet (250g) raspberries
  • 1/2 cup (125ml) lemon juice
  • 1/2 cup (100g) sugar
  • 4 cups (1L) water
  • 1 sprig mint, to serve


  1. Place the raspberries, lemon juice and sugar in a blender or food processor and blitz until smooth.
  2. Pour the mixture through a sieve into a jug, using the back of a spoon to press the pulp through.
  3. Add the water and stir well.
  4. Serve over ice, with a sprig of mint.

For a more tart lemonade, add less sugar. For a sweeter drink, add more sugar or use a sugar syrup. You could also add a splash of vodka or gin.
