These peanut butter brownies are fudgy, chocolatey and full of peanut butter flavour. They’re easy to make and can be ready in just over half an hour.
Ingredients
- 115g butter
- 115g dark chocolate, broken into pieces
- 2 eggs
- 150g caster sugar
- 1 teaspoon vanilla extract
- 85g self-raising flour
- 2 tablespoons cocoa powder
- 100g peanut butter
Method
- Preheat the oven to 180C/350F/Gas 4.
- Grease and line a 20cm/8in square tin with baking parchment.
- Put the butter and chocolate in a heatproof bowl over a pan of simmering water and stir until melted and smooth.
- Remove from the heat and leave to cool for a few minutes.
- In a separate bowl, whisk together the eggs, sugar and vanilla extract until light and fluffy.
- Stir in the melted chocolate and butter mixture until well combined.
- Sift in the flour and cocoa powder and stir until well combined.
- Stir in the peanut butter until well combined.
- Pour the mixture into the prepared tin and spread evenly.
- Bake in the oven for 25-30 minutes, or until a skewer inserted into the centre comes out clean.
- Leave to cool in the tin before cutting into squares.
