Introduction

Ingredients
– 500ml full-fat milk
– 1 vanilla bean, split and seeds scraped
– 400g caster sugar
– 6 egg yolks
– 500ml double cream
– 1 teaspoon peppermint extract
– 100g dark chocolate, chopped
Method
1. Pour the milk into a saucepan and add the vanilla bean. Heat until just below boiling point.
2. In a bowl, whisk together the sugar and egg yolks until pale and creamy.
3. Pour the hot milk into the bowl, whisking constantly.
4. Return the mixture to the saucepan and cook over a low heat until thickened and coats the back of a spoon.
5. Remove from the heat and stir in the cream and peppermint extract.
6. Pour into a food processor and blend until smooth.
7. Chill in the fridge for at least 4 hours, or overnight.
8. When ready to churn, add the chocolate and process in an ice cream maker according to the manufacturer’s instructions.
9. Serve immediately or store in the freezer for later.

– For a mint choc-chip ice cream with a little more punch, try using mint chocolate instead of plain dark chocolate.
– If you prefer a softer ice cream, add an extra egg yolk to the mixture.
