Wild Rice Pilaf
Introduction
This dish is a great way to use up leftover rice, and can be easily customized to your liking. It makes a great side dish, or can be served as a main course.
Ingredients
1 cup wild rice
1 cup white rice
2 cups chicken broth
1 onion, diced
1 green bell pepper, diced
1 carrot, diced
1 celery stalk, diced
1/4 cup butter
1/4 cup parsley, chopped
Salt and pepper to taste
Method
1. In a large pot, bring the chicken broth to a boil.
2. Add the wild rice and white rice, and stir to combine.
3. Reduce the heat to low, cover the pot, and simmer for 45 minutes.
4. In a separate pan, sauté the onion, green bell pepper, carrot, and celery in the butter until softened.
5. Add the sautéed vegetables to the pot of rice, and stir to combine.
6. Season with salt and pepper to taste, and stir in the chopped parsley.
7. Serve hot, and enjoy!
Potential changes & improvements
There are endless ways to customize this dish to your liking. Feel free to experiment with different types of rice, or add in other vegetables such as mushrooms, zucchini, or squash. You could also swap out the chicken broth for vegetable broth to make it vegetarian.
