Ingredients
- 1 aubergine, cut into chunks
- 1 courgette, cut into chunks
- 1 red pepper, cut into chunks

Method
1. Preheat the oven to 200 degrees Celsius.
2. In a large roasting dish, mix together all of the ingredients except for the olive oil.
3. Drizzle over the olive oil, and season with salt and pepper.
4. Bake in the oven for 30-40 minutes, until the vegetables are cooked through.
