Introduction

-2-3 ancho chili peppers

-1/2 teaspoon salt

Method

2. In a blender or food processor, combine the chili peppers, vinegar, garlic, cumin, oregano, salt, and black pepper. Blend until the mixture is smooth.

3. Place the pork in a large bowl or container, and pour the chili pepper mixture over it. Stir to coat the pork evenly.

4. Cover the bowl or container, and refrigerate for at least 4 hours, or overnight.

5. Preheat a grill or grill pan over medium-high heat.

6. Grill the pork for 5-7 minutes per side, or until cooked through.

7. Serve with rice, beans, and tortillas.
