Clafoutis (pronounced kla-foo-TEE) is a French dessert of fruit, traditionally cherries, baked in a custard-like batter. It can be made with other fruits as well, such as plums, apples, berries, or pears. Clafoutis is usually made in a pie dish or baking dish and served for breakfast or brunch, or as a light dessert.
Ingredients
- 1/2 cup (100 grams) granulated sugar, divided
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 1 cup (240 ml) whole milk
- 3 large eggs
- 1/2 teaspoon vanilla extract
- 1/3 cup (80 ml) cherry juice or cherry liqueur
- 1 cup (130 grams) all-purpose flour
- 2 tablespoons (30 grams) unsalted butter, melted
- 1 1/2 cups (360 grams) fresh cherries, pitted
Method
Preheat oven to 375 degrees F (190 degrees C). Butter an 8 inch (20 cm) round baking dish.
In a small bowl, whisk together 1/4 cup (50 grams) of the sugar, cornstarch, and salt. In a medium saucepan, heat the milk over medium heat until it just comes to a boil. Whisk in the sugar mixture and cook until thickened and bubbly. Remove from the heat.
In a medium bowl, whisk together the eggs and vanilla. Gradually whisk in the hot milk mixture. Stir in the cherry juice or liqueur. Add the flour and whisk until smooth.
Pour the batter into the prepared pan. Sprinkle the cherries over the top. Bake for 35 to 40 minutes, or until the clafoutis is puffed and golden brown. Serve warm.
Potential changes & improvements
If you want a richer clafoutis, you can use half milk and half cream. You can also substitute almond extract for the vanilla extract.

Clafoutis goes well with a simple green salad for a light lunch or dinner.
Common Mistakes
Be sure to whisk the eggs well before adding them to the hot milk mixture. This will prevent them from curdling.
