Ingredients
- 1 cup (250ml) milk
- 1/2 cup (125ml) vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups (250g) self-raising flour
- 1/2 cup (50g) cocoa powder
- 1 cup (200g) sugar
- 1 cup (250ml) strong coffee
Method
- Preheat the oven to 180C/350F/Gas 4.
- Grease and line a 9×9 inch baking tin.
- In a large bowl, whisk together the milk, oil, eggs and vanilla extract.
- Sift in the flour, cocoa powder and sugar, and mix until everything is combined.
- Stir in the coffee.
- Pour the batter into the prepared tin, and bake for 35-40 minutes, or until a skewer inserted into the center comes out clean.
- Leave to cool in the tin for a few minutes, then turn out onto a wire rack to cool completely.
Potential changes & improvements
If you want a stronger coffee flavour, you could add an extra 1/2 cup of coffee. You could also add a frosting or glaze, made with coffee and icing sugar.
