Cucumber and Tomato Salad
A simple and healthy salad which is perfect for a light lunch or as a side dish.
Ingredients
1 cucumber, diced
1 tomato, diced
1/2 red onion, diced
1/4 cup (60 ml) white wine vinegar
1/4 cup (60 ml) olive oil
1 tablespoon (15 ml) Dijon mustard
Salt and pepper to taste
Method
1. In a large bowl, combine cucumber, tomato and red onion.
2. In a small bowl, whisk together white wine vinegar, olive oil and Dijon mustard.
3. Pour the dressing over the salad and season with salt and pepper to taste.
4. Serve immediately or refrigerate for later.
Potential changes & improvements
-Add some chopped fresh herbs such as basil or parsley.
-Try using balsamic vinegar instead of white wine vinegar.
-Add some crumbled feta cheese or diced avocado.
